Q&A with Head Chef Francesco Marsella

Francesco Marsella is Amano’s head chef, and we think it is about time we caught up with him to find out a little bit more about the man behind the menus!

Tell us a little bit about yourself?

My hometown is Viareggio – a seaside town near Pisa in Tuscany. It is pretty touristy but it is also right next to the sea so is a great place for lovely seafood dishes.

How did you get into cooking?

My grandmother gave me my passion for food and Italian cooking. I can remember when I was small making fresh pasta with her almost every week, getting ready for Sunday lunch back in Italy!

What ingredient could you not live without and what do you like to cook? 

There are so many ingredients that I love it is hard to choose! I use a lot of garlic in my cooking, and tomatoes are a staple for me, but i think aubergine has got to be one of my all-time favourites ! I particularly enjoy making pasta – its comforting and reminds me of home.

Where is your favourite place to eat?

To eat? Nowhere is more comforting than my home, but my favourite restaurants in the UK are La Sartoria, who serve amazing Italian dishes from the Calabria region in Southern Italy, and Roka, a brilliant Japanese grill and sushi restaurant – their seafood is incredible!

Can you tease us with any upcoming new dishes?

We have got a few new dishes in the works that you will see on the Amano menus very soon. Recently we have added a beautiful pumpkin risotto with taleggio cheese and as we move into autumn you will soon see a delicious pumpkin, ricotta and prosciutto dish join the menu. I also love a new sea bass dish with peperonata and salsa verde that we have coming soon.
