Hailing from Madeira, Chef Jose is bringing a dash the Mediterranean to West Malling. One half of the new Portuguese pop up we thought we would introduce him to you with a quick Q & A! Olá Jose!
What do we have to try on the new Amano menu?
All of the petiscos, and the chicken espedata is the real deal!
What did you grow up eating in Madeira?
I ate espetadas (skewers of meat, fish or vegetables cooked over a flame), Bolo do caco (a kind of sweet potato bread) and pastel de nata (those delicious custard tarts topped with cinnamon!) They are all on the menu!
What do you like to cook at home?
I love to cook family style feasts. Sharing is caring!
Describe your cooking style in three words?
My style is very much what you see is what you get! If i were to try and put that into three words i would say simple, honest and tasty!
When you aren’t in the kitchen, what can we find you doing?
You’ll find me enjoying time with my family, in the garden, out on my bike and spending time on the cars – I have a real passion for classic cars.
What is your favourite ingredient to cook with?
I love all ingredients but i particularly enjoy creating fish dishes.
If you could cook a meal for anyone, who would it be?
David Wong – we cooked together when I was at Chapel Down and we did a pop up there together too.
